Chinese Artichokes are part of the mint family and are an easy to grow perennial edible tuber that you harvest over the winter months. They produce prolific amounts of crunchy nutty tubers that can be eaten raw or tossed into stir fries. They are a welcoming sight when there is not much else to harvest. Super hardy, leave tubers in the ground until you want to eat them. Leave some for re-producing the following year.
